Vegan and Omnivore Meals

What’s for dinner? A week’s meal plan for a vegan and omnivore household.

My youngest daughter (11) recently announced she wanted to become a vegan.  Years ago, I was a vegetarian and on/off vegan for 16 years. At that time my husband and children ate what I cooked- easy!  Now, I have a different husband and older children who share no interest in being a vegetarian let alone a vegan again.

My conscious has been bothering me lately about eating meat so this seems like a great time to support my daughter and become a vegan with her.  No problem except I still have 3 other family members that need to be fed and do not wish to eat vegan. A few years ago, I also discovered I cannot eat gluten so in addition to eating vegan dishes, my meals also have to be gluten free!

What to do?

I have always tried to plan our meals but with 2 different main dishes it is now crucial we meal plan each week!  Fortunately, my husband and children cook so on a good day, I or my youngest child will prepare the vegan main meal and my husband or children will prepare the meat main meal.  We share the responsibility of making sides we all can eat.
